Plant Based Tex Mex Stuff Potatoes

The original recipe for this is not plant based and does include dairy. However, I am sharing with you the plant based version that I made. It sounds like this would not make a meal but it is very filling and delicious.
Ingredients:
5 russet Potatoes
1 can( 15oz) Organic Black Beans
3/4 cup of Organic Sweet Corn ( I used my homemade sweet corn)
1 organic red bell pepper( Diced)
1 organic green bell pepper(diced)
1 yellow onion(diced)
1/8 tsp. organic chili powder
1/4 cup plant based butter ( I use wegmans)
1/2 cup plant based greek yogurt or yogurt
Course Kosher Salt
Violife colby & monterey jack cheese
Instuctions:
Wash potatoes and use kosher salt for slightly coating potatoes and poke potatoes with fork
Cook potatoes in the oven, microwave, or air fryer how you would normally bake potatoes. I used the senor setting on my microwave for baked potatoes.
While potatoes are cooking. Mix black beans, corn, bell peppers, onion, and chili powder on stove top in saucepan for 2-3 minutes or until vegetables are tender.
Once potatoes are cooked. Cut potatoes lengthwise and scoop out potatoes into vegetable mixture leaving about 1/4 inch thick shells. Add butter, yogurt and mash mixture until desired consistency. I left mine slightly chunky.
Spoon mixture back into the shells until they are slightly overfilled then put them back into the microwave, top with cheese. Microwave on high for about 1-2 minutes or until cheese is melted.
